Pork and Radish Hash – Keto Friendly

This simple yet flavoursome hash is loaded with crispy minced pork, crumbled bacon, tender radishes and tangy cheddar cheese.

This versatile dish makes for a great breakfast, brunch or even lunch served with a green salad. Perfect for sharing!

Ingredients

  • 300 g radishes tops removed and quartered
  • 200 g minced pork
  • 2 rashers bacon roughly diced
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 1 tbsp red onion finely diced
  • 1/2 cup cheddar cheese grated
  • 1/2 tbsp fresh chives finely chopped
  • a generous pinch of sea salt and freshly ground black pepper to taste

Instructions

  • Heat a tablespoon of olive oil in frying pan over a medium/high heat. Add the bacon and cook through until crisp and golden. Remove from the pan with a slotted spoon and set to one side.
  • Add the pork to the pan and cook through until browned all over.
  • Whilst the pork is cooking, heat a tablespoon of olive oil in a separate frying pan over a medium heat. Add the radishes and cook for 5 minutes.
  • Add the onion and garlic and reduce the heat a little. Cook gently for a further five minutes until the radishes are tender and starting to turn golden.
  • Once the radishes are tender and the pork is cooked, tip the radishes into the pan
    with the pork. Continue cooking for a further few minutes to crisp the pork.
  • Remove from the heat and scatter over the grated cheddar and crumble over the crispy
    bacon.
  • Scatter with the fresh chives to serve.
