Keto Summer Strawberry & Goats Cheese Salad

This light and refreshing keto inspired summer salad is loaded with flavour and fats. The added texture from sweet strawberries, crunchy pecans, tender spinach and tangy goats cheese makes this a satisfying meal.

This is a great lunchtime salad option or can be served as a side salad with an evening meal.

for the salad

  • 1/4 cup pecans
  • 2 cups baby spinach
  • 1 medium avocado peeled and sliced
  • 4 medium strawberries sliced
  • 3 cherry tomatoes quartered
  • 1/4 medium red onion finely sliced
  • 2 tbsp goats cheese
  • 1 tsp fresh rosemary finely chopped
  • a pinch of sea salt and freshly ground black pepper to taste

for the dressing

  • 1 tbsp balsamic vinegar
  • 1 tsp lemon zest
  • 1 tbsp olive oil


  • Add the pecans to a dry frying pan over a low/medium heat. Toast gently for a minute or two then set aside.
  • Add the dressing ingredients to a small bowl. Whisk together to combine.
  • Add the spinach to a large salad bowl along with the avocado, strawberries, tomatoes and onions.
  • Crumble over the goats cheese and chopped rosemary.
  • Season the salad with a little salt and pepper and toss together to combine.
  • Top the salad with toasted pecans and drizzle with balsamic dressing to serve.
